For many, there is nothing better than a good old fashion British barbecue. A weekend barbecue when the sun is playing ball is as authentically British as cricket or Wimbledon. Or is it? The Brits aren’t the only barbecue lovers; in fact barbecuing foods has been a part of many cultures across the globe for many years.
The International Barbecue
We know the Australians throw a good barbecue of course and the Americans too, but it is not often that we associate Chinese or Indian foods for example. Exploring the way in which other cultures enjoy the modern barbecue is another way to enjoy the versatile and age old form of preparing a meal and hosting a social occasion.
There are many recipes available which heavily feature Chinese and Indian recipes for example and these are just two which will have your taste buds tingling and have you eager to try new barbecue recipes from around the world.
Chinese Spare Ribs
Serves 3-4 people
- 1kg Pork spare ribs
- 4 table spoons of soy sauce (light)
- 4 tablespoons of soy sauce (dark)
- 1 heaped tablespoon of tomato sauce (ketchup)
- 2 tablespoons of balsamic vinegar
- 50g hoisin sauce
- 2 minced garlic cloves
- 2 level teaspoons of brown sugar
- 35g honey dissolved into 70ml just boiled water
This is a very easy dish to make.
- Place the pork spare ribs into a dish.
- Combine the dark and light soy sauces, balsamic vinegar, garlic, sugar, ketchup and hoisin sauce in a bowl and mix well.
- Marinate the spareribs overnight in a refrigerator with the mixture; allowing the pork to take on the flavours. Ensure the pork is completely covered. This may require you to turn the spare ribs.
- Cook the spare rib over a medium heat, turning occasionally. Every time the meat is turned, baste it with honey and water mixture. Barbecue until properly cooked through.The result is a delicious and flavoursome Chinese spare rib that works beautifully at any barbecue. You can use the same marinade on different meats such as chicken thighs and fillets.
Indian Barbecue Tandoori Chicken
- 1 teaspoon crushed chillies (red or green)
- 1 teaspoon coarse salt
- 1 teaspoon curry powder (tandoori)
- ½ teaspoon paprika (smoked paprika makes a nice alternative)
- ½ teaspoon ground turmeric
- ½ teaspoon ground cinnamon
- 4 tablespoons of water
- 4 skinned and boneless chicken pieces (preferably fillets)
This is a quick and easy tasty tandoori barbecue recipe
- Combine the cinnamon, paprika, chillies, salt, turmeric and curry powder with water in a small bowl to make a smooth tandoori paste.
- Use this paste to rub all over the chicken breast, ensuring that they are completely covered.
- Leave to marinate for half an hour.
- Brush the breasts with oil before cooking on a high barbecue heat, turning occasionally and ensuring that the chicken is cooked through.
The result is a fantastic tandoori chicken recipe that works well with salad, rice, pasta or can just be enjoyed by itself.
